Braised Beef in Red Wine
This recipe is adapted from the January 2007 issue of Gourmet. I’ve changed only a couple of things, including the oven temperature, which I found was too high for my cast-iron pots. They held the heat so well — at 325 degrees, the simmer was too hard — that I had to reduce the cooking temperature to 300 degrees.

Welcome to Market Chefs
Market Chefs is a culinary program designed by chefs Kathryn Yeomans and Kelly Myers to give market goers in-depth information about shopping for and cooking local food.
With Yeomans and Myers onsite, shoppers have access to a number of culinary resources. They will be able to learn firsthand how to select and prepare a range of vegetables, watch a demonstration on food preservation, or work with Yeomans and Myers to draw up a menu game plan for their market purchases.
“With a farmers market as your source, it helps to be flexible. It’s very different from going grocery shopping with a list to consult,” says Market Chefs co-founder Kelly Myers. “At the same time, people want to get more produce into their diets. We saw a need to teach shoppers how to prepare the diverse products for sale in our farmers markets. We want to help them fit from-scratch cooking into their routines.”
Find Market Chefs at the Montavilla Farmers Market Sundays at 10am-2pm, from August 3rd through October 5th. Yeomans and Myers will give tutorial and interactive cooking demonstrations, provide cooking suggestions, preservation information and preparation tips, give one-on-one meal and menu consultations, and host a website where shoppers can find guidelines, menus and recipes pertinent to what’s for sale at the market.
